Colorful Colcannon for Saint Patrick's Day
Yet another cabbage made its way into my CSA share last week, but this time I didn’t fret. After a few successful & yummy cabbage dishes under my belt, I was ready to tackle more. The featured dish? Irish Colcannon with a vegan twist… While there are many variations of this rustic dish, colcannon is traditional Irish fare made from mashed potatoes & cabbage or kale. It is often doctored up with chives, sour cream, butter, leeks, bacon, or ham. I would’ve preferred to use ka

Carrot Cake Cupcakes
I had to showcase these beautiful cupcakes that we served after Easter dinner. Carrot cake is the quintessential springtime dessert & will always remind me of my dad, who requests it on every birthday. I wonder if he's noticed that we slipped in a vegan version? The recipe for these cuties was inspired the Vegan Holiday Kitchen & honestly, I doubt one could tell a difference in a side-by-side taste test. The cake itself is moist & fluffy & the cream cheese frosting is rich

New Year’s Eve Paella
A few years ago I decided to start my own “New Year’s Day Tradition” - a Champagne & Paella Party. This year I had a change of plans & made paella for NYE. I didn’t have the “party” but opened it up for anyone who might want to drop by. My recipe this year came from my newly acquired & quickly beloved Candle 79 Cookbook , which was a Christmas gift from my darling Mom (I gave her a copy as well). One of the first recipes I opened to when thumbing through the book was their Pa

Texas Caviar for Health, Wealth, & Prosperity!
Happy New Year, everyone! I celebrated NYE with a few fresh basil martinis at my favorite neighborhood French bistro, & then made a decadent dinner of Artichoke Crostini, Fennel & Fruit Salad with Mandarin Champagne Vinaigrette, & Truffled Mac & Cheese - all vegan, of course. The martinis & wine really wiped me out & sadly I was asleep on the couch by 10. So much for the champagne toast at midnight! I started my first day of 2013 with some peach detox tea, a fresh green juic

Pistachio, Cherry & Chocolate Tart - Veganized!
I hope everyone had a delightful Christmas! Today I am sharing the festive & decadent dessert that graced our holiday table. For dessert this year, we strayed away from our usual cupcakes & cheesecake, as my Mom was inspired by a Pistachio, Cherry & Chocolate Tart, featured on a recent episode of Giada at Home . It seemed simple enough to veganize with a few swaps - vegan butter, coconut cream, & vegan chocolate chips - & we welcomed the challenge! Festive Pistachio, Cherry

Recipe Review: Festive Chickpea Tart
This was a dish that was supposed to be served Christmas morning, but it didn’t happen, as there was not enough time. So we opted for quick bake cinnamon rolls, veggie bacon, & fruit salad, & then made this for post-Christmas brunch. I did a whole lotta nothing this holiday, except for a bit of cooking. I spent most of the day in my new “I Love Paris” jammies, and it was wonderful. I am reveling in not working a retail job this holiday season & avoiding the mall at all costs.

Nava’s Thanksgiving Risotto: Recipe Review
It's that time of year when my Mom & begin frantically testing veg-friendly Thanksgiving recipes! Thanks to the brilliant spreads in both VegNews & Vegetarian Times , we have a lot of inspiration to draw from. Yet, as we are both admitted obsessive cookbook collectors, we have a lot to pull from there as well. We thought we were getting a head start a few weeks ago when we whipped up this lovely “Baked Thanksgiving Risotto,” but time has a way of getting away from you! Wit
